Ingredients:
1 chicken, cut into pieces
2 onions, chopped
2 garlic cloves, minced
2 tomatoes, grated
1 teaspoon of saffron or turmeric
1 teaspoon of cumin
1 teaspoon of black pepper
1 teaspoon of ground ginger
1 tablespoon of oil or butter
1 cup of sefa (small pasta or couscous)
Chicken broth or water
Salt to taste
Chopped parsley for garnish
Preparation:
In a large pot, heat the oil or butter, then add the chopped onions and minced garlic and sauté until soft.
Add the chicken pieces to the pot and stir until they are golden brown.
Add the grated tomatoes and spices (saffron, cumin, black pepper, and ginger), and mix the ingredients well.
Add the chicken broth or water and cook the chicken over low heat for 30-40 minutes until it’s fully cooked.
In another pot, cook the sefa according to the package instructions.
Once the chicken is cooked, place the sefa in a serving dish and arrange the chicken on top.
Pour the broth over the sefa and garnish with chopped parsley.
