Ingredients (Cake):

  • 2 cups grated carrots
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2/3 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 1 tsp vanilla
  • 2 cups powdered sugar

Instructions:

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch pan.
  2. Mix dry ingredients in one bowl. In another, whisk oil, sugar, eggs, and vanilla.
  3. Add carrots and nuts. Mix wet and dry ingredients together.
  4. Pour into pan and bake 30–35 minutes, or until a toothpick comes out clean.
  5. Cool, then frost with cream cheese frosting.

🧁 2. Healthy Whole Wheat Carrot Cake Muffins

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1/2 cup honey or maple syrup
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 eggs
  • 1/3 cup coconut oil or olive oil
  • 1 1/2 cups grated carrots
  • 1/2 cup unsweetened applesauce
  • 1/4 cup raisins or chopped dates (optional)
  • 1 tsp vanilla

Instructions:

  1. Preheat oven to 350°F (175°C). Line a muffin tin.
  2. Mix dry and wet ingredients separately, then combine.
  3. Fold in carrots and raisins.
  4. Fill muffin cups 3/4 full. Bake for 18–20 minutes.

🍰 3. Carrot Cake Layer Cake (Showstopper Style)

Cake Layers (double the Classic recipe above)
Bake in two 9-inch round cake pans.

Add-ins:

  • 1/2 cup crushed pineapple (drained)
  • 1/2 cup shredded coconut

Cream Cheese Frosting (double):

  • Use the classic frosting recipe, doubled for layers and topping.

Assembly:

  1. Level cooled cake layers.
  2. Spread frosting between layers and over the top and sides.
  3. Decorate with chopped nuts, carrot ribbons, or a sprinkle of cinnamon.
