Ingredients (Cake):
- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 2/3 cup vegetable oil
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla extract
- 1/2 cup chopped walnuts or pecans (optional)
Frosting:
- 8 oz cream cheese, softened
- 1/4 cup butter, softened
- 1 tsp vanilla
- 2 cups powdered sugar
Instructions:
- Preheat oven to 350°F (175°C). Grease an 8×8 inch pan.
- Mix dry ingredients in one bowl. In another, whisk oil, sugar, eggs, and vanilla.
- Add carrots and nuts. Mix wet and dry ingredients together.
- Pour into pan and bake 30–35 minutes, or until a toothpick comes out clean.
- Cool, then frost with cream cheese frosting.
🧁 2. Healthy Whole Wheat Carrot Cake Muffins
Ingredients:
- 1 1/2 cups whole wheat flour
- 1/2 cup honey or maple syrup
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 eggs
- 1/3 cup coconut oil or olive oil
- 1 1/2 cups grated carrots
- 1/2 cup unsweetened applesauce
- 1/4 cup raisins or chopped dates (optional)
- 1 tsp vanilla
Instructions:
- Preheat oven to 350°F (175°C). Line a muffin tin.
- Mix dry and wet ingredients separately, then combine.
- Fold in carrots and raisins.
- Fill muffin cups 3/4 full. Bake for 18–20 minutes.

Bake in two 9-inch round cake pans.
Add-ins:
- 1/2 cup crushed pineapple (drained)
- 1/2 cup shredded coconut
Cream Cheese Frosting (double):
- Use the classic frosting recipe, doubled for layers and topping.
Assembly:
- Level cooled cake layers.
- Spread frosting between layers and over the top and sides.
- Decorate with chopped nuts, carrot ribbons, or a sprinkle of cinnamon.
